Sweet Corn Fritters Serves 2-4
Ingredients
1 can Creamed sweet corn
¾ Cup plain flour
1tsp baking powder
½ tsp salt
Black pepper
1 egg
2 Tbsp olive oil
1 spring onion
Creme fraiche
Smashed avocado
Method:

Add creamed sweet corn, flour, baking powder, salt, pepper and egg to a bowl. Mix to combine batter mixture well.

Slice up spring onion finely and add to the batter mixture.

Drizzle olive oil into a frying pan over a moderate heat. Dollop large tablespoons of batter into the pan.

When the top of each fritter looks set, flip over until golden on each side.

Remove from the pan once cooked, place on a paper towel to remove excess oil.

Serve hot with a dollop of creme fraiche and a ½ smashed avocado on top.
Banana bread cookies (Makes 8 cookies)
Ingredients
1 large ripe banana
1 cup instant oats
1 90g packet puree apple sauce/baby food
1 tsp vanilla powder
1tsp cinnamon
Handful of dark chocolate chips
Handful of raisins
Butter
Mascarpone
Berry jam
Method:

Peel and mash banana with a fork in a large bowl. Add oats, apple sauce, vanilla powder, cinnamon, chocolate chips and raisins and mix well to combine.

To cook

Option 1. Preheat oven to 180 degrees and add tablespoon sized dollops of cookie dough onto a baking tray lined with baking paper. Flatten into rounds. Bake for approx 12 minutes until golden.

Option 2. Add a knob of butter to a frying pan over a moderate heat and add tablespoon sized dollops of cookie dough to the pan. Flatten into rounds. Fry with the lid on for approx 3 minutes each side, until golden.

Enjoy warm with a dollop of mascarpone cream and jam, or store in an airtight container for two days or freeze and reheat.
ABC vitality shots
A is for Açai berries, frozen in single serve pouches and found at the supermarket.
B is for beetroot powder, or beetroot juice, or cooked beetroot, cubed and frozen.
C is for cherry juice, ideally tart cherry juice (more antioxidants) or concentrate.
Place one serve of each in a blender and pulse. Add water or Greek yoghurt if you wish. Enjoy as a breakfast smoothie or divide into small glasses and share with the family as a vitality shot in the morning.
