Cherry Coconut Quinoa Porridge (Serves 2-4)

 

Ingredients:

½ C quinoa 

1C water

1C light coconut milk

½ C frozen cherries, destoned 

1 packet frozen Açai pulp, or ½ C of frozen fruit of your choice

1Tbsp Honey

Pinch of Sea salt

Cinnamon 

Dried coconut, nuts to garnish

 

Method:

  1. Cook the quinoa in the water for 15 minutes or until the water is absorbed. Set aside, leaving the lid on to allow the quinoa to go fluffy.

  2. To prepare the fruit sauce, pour the coconut milk, frozen cherries, açai, honey and salt in a blender, and blend until smooth, approx 15-30 sec. If it goes like frozen ice cream, add a little water to thin it down.

  3. To serve, place some cooked quinoa in a bowl with a sprinkle of cinnamon. Pour the fruit sauce over the top. Garnish with dried coconut chips, nuts or cut fruit of your choice.

 

 

 

Breakfast Burritos (Serves 2-4)


Ingredients:

2-4 tortilla breads

2-4 tomatoes

Sea salt

Bunch of coriander 

2 ripe avocados

1 lime

Olive oil

4 eggs

1 Spring onion

Mature cheese

1 can cooked black beans

Peri-peri chilli sauce


Method:

  1. Wash and slice the tomatoes and spread out on a large plate. Slice the coriander, and sprinkle on top of the tomatoes with a pinch of sea salt. 

  2. Slice avocados in half, destone them and scoop the avocado flesh out. Squeeze fresh lime juice over the avocado to stop them going brown. Slice into strips and place on top of the tomatoes. 

  3. Drizzle olive oil in a frying pan over a medium heat. Crack the eggs in the pan, and move them about gently with a wooden spoon or spatula, dragging the eggs from the outside of the pan to the middle, to make ribbons. Add the spring onions and little knobs of the cheese, so they partially melt into the eggs. Don’t let the eggs overcook, leave them looking soft and silky.

  4. To serve, place tomatoes, avocado, black beans and eggs in the middle of a tortilla bread, in a small line. Top with chilli sauce. To wrap the bread, fold over the bottom, then one side and the next, leaving the top open like a cone. Enjoy for breakfast, brunch, lunch or dinner. The ultimate all day option!

 

Affogato (Serves 1)

Ingredients:

Fresh espresso coffee

Ice cream (chocolate or vanilla works best)


Method:

For a decadent and super fast dessert or weekend breakfast treat, place a small scoop of ice cream in a little coffee cup. Pour fresh hot coffee over the top of the ice cream to “drown it”, and sip away. Delizioso!!
